Weekend Recipe: Roasted Frozen Vegetables

This isn’t a weekend recipe per se, but it’s one of the “recipes” I make the most!

Mamas, let’s be honest. It’s hard to get littles to eat veggies sometimes, and it’s hard to find time to make veggies when you are taking care of a lot of little people.

Enter roasted frozen vegetables.

Did you know that frozen vegetables may have more nutrients than fresh vegetables?

This is because they are flash frozen right after they are picked and this may retain more of the nutrients! Easier and winning.

You can find a recipe online for any vegetable you want to roast, and I do roast fresh vegetables but at least twice a week I do this:

Roasted Frozen Vegetables

  • Preheat your oven to 400 or 425, you’ll figure out what works!

  • Get out a bag of frozen vegetables (we love broccoli or green beans and I get them at Costco so I always have a bag on hand!) and put them on a cookie sheet.

  • Put the pan of frozen vegetables in the oven (this lets them defrost a bit).

  • When your oven beeps and preheating is done:

    • Take out the pan and drizzle them with oil, I love using Avocado oil for the flavor, but have also done olive oil

    • Season the veggies (I usually just use salt, but you could use pepper, Garlic salt, 21 Seasoning Salute, whatever!)

  • Put them back in and roast for 20 min!

    • Sometimes for my littles I’ll check them at 15 min because they don’t like them burnt like I do

There are so many combinations of this that you could do! We all need more vegetables in our life and this is a super easy and tasty way to get more!
