we've been wanting to make beer bread for a while and this weekend we found a ridiculously good recipe.i knew i wanted to use einkorn flour but i wasn't sure if it would work with the recipe we had. do you know about einkorn? i can't say enough good things about it as a dietitian. its makeup is easier to digest than traditional wheat making it an option for some people who may have sensitivities to other wheat. this allows the body to be able to digest it easier. the vitamins and minerals in it are more bio available which means you're getting more bang for your nutrient buck.i also wanted to find a recipe that didn't use refined sugar. i usually use coconut palm sugar as a replacement, but i didn't have any so wanted to find one that used honey and maple syrup.we decided on this recipe as our guide and i made a few adjustments:

INGREDIENTS:

2 tablespoons melted coconut oil2 tablespoons steen's cane syrup1/4 cup honey1/4 cup maple syrup1 teaspoon cinnamon1/2 teaspoon salt3 cups einkorn flour1 tablespoon baking powder12 ounces beerthe result was the best beer bread we've ever tasted. we seriously wanted to eat the whole loaf in one sitting! joe has also gotten really good at making "preserves" from fresh and frozen fruit without sweetener. he muddled frozen blueberries then cooked them on the stove to make a fruit spread.this is a super easy, simple recipe that was a great way to spend a rainy sunday afternoon baking.what is your favorite bread recipe?
