Weekend Recipe: Everything Bagel Cashews
I recently found The Balanced Life Podcast and I LOVE the premise because it’s highlighting that no one can do it all. Even people who appear to be doing it all really aren’t, and it’s an honest look into how they make life work with families, littles, health, self-care, you name it. Go listen!
What does that have to do with recipes? For me, everything!
If you know me you know my not-so-secret secret, is that I don’t really cook. I have an incredibly kind and generous Aunt who lives in our same city who cooks for their family and ours, and so a lot of our meals every week are covered. I fill in sides and vegetables and we eat a lot of macaroni, and in this season of life that works for us!
I don’t meal plan, gasp, I don’t prepare dinner every night, sometimes we get Chick Fil A (read more than sometimes). I do however love cooking and recipes and nutrition, shocker, so I like to find SUPER simple “recipes” that I can make for sides and snacks and fun treats.
I’ll be sharing those here every Friday, so when you have those extra moments over the weekend you can make them!
Everything Bagel Cashews
A few weeks ago at CVS I saw these Everything Bagel Cashews and I had to have them! I’m obsessed with all things Everything but the Bagel Seasoning and I was in there getting prescriptions for our girls and quickly grabbed them not reading the ingredients. When I got home, I flipped the package over and they had corn syrup solids. Why? And gross.
So I decided to come up with a recipe of my own, and they were DELICIOUS. Joe even ate the CVS ones and said mine were way better!
WHAT YOU NEED
2 cups raw Cashews
1-2 T coconut oil
Everything But the Bagel Seasoning (mine is from TJ’s but I hear Costco has it!)
Black Pepper Vitality Essential Oil (optional)
HOW TO MAKE IT
Preheat oven to 375
Melt your coconut oil (if you live in New Orleans this might already be done for you) and add 1-2 drops of Black Pepper Vitality
I would start with 1 T of oil and see how much you need, just enough to cover the nuts!
Put the nuts in a bowl, stir/toss/whatever you want with the oil
Shake your seasoning on! I probably used way more than I needed but I wanted the flavor. If you like exactness start with 1 tsp of seasoning and work your way up
Make sure the cashews are coated with oil and seasoning and put them on a cookie sheet lined with parchment paper
Roast? Bake? Can you see how professional these recipes are? in the oven for about 15 min. I like to check min every 5 minutes and toss and turn the pan. You want the cashews to be golden brown
We gobbled them up and I can’t wait to make more!
